Good Eats #1 - Kale Pizza

Healthy pizza?  You bet.  Ordering pizza out, Nicole and I both noticed that no matter how healthy our ingredients were, we felt sluggish afterwards.  All the oils, sodium and additives were weighing us down.

Here's a recipe for a wonderful veggie pizza with kale, zucchini and basil straight from your oven!

Note:  I'm not much of a measurer when it comes to cooking.  The cooks in my family usually just take stuff out of the fridge, use what you need and leave the leftovers for tomorrow nights meal.  Damn the measuring spoons!

Why Kale?

  • Kale is extrememely high in vitamins K, A, and C. 
  • It helps detoxify the body.
  • High in Omega-3 Fatty Acids = great anti-inflammatory benefits
  • Has been found to help prevent over 45 different types of cancer.


Ingredients:
  • Pizza crust - You can find pre-made pizza crusts at any grocers, or you can make your own from scratch.  Trader Joe's sells a pre-made pizza dough you can stretch yourself.
  • Pesto or white sauce 
  • Green or red kale
  • Zucchini
  • Red Onion
  • Fresh basil
  • Sea salt
  • Olive oil
  • Grated mozzarella cheese


Preparation:
Prepare your pizza foundation.  Use a pre-made pizza crust or make your own.

Wash the vegetables thoroughly and let dry.  Trim the kale to separate the kale from it's spine and discard the spine.  Break into 2" pieces.

Spread evenly the pesto or white sauce over the crust.  Sprinkle a light amount of mozzarella cheese to "glue" the bottom ingredients.  Place thinly sliced zucchini and onions.  Another light layer of cheese.  Completely cover the rest of the pizza with the kale leaves.  Spray or drizzle olive oil and sprinkle salt to taste.  Cover with mozzarella and top with basil.

Bake at 450 for approximately 15 minutes or until the kale is lightly toasted.
